At Karuizawa Marriott Hotel (Karuizawa Town, Kitasaku District, Nagano Prefecture, General Manager: Nobuaki Arayayama), from June 1st (Saturday) to September 30th (Monday), 2024, at the restaurant “Grill & Dining G” We are pleased to announce the release of “Prime Shinshu -Summer-”, a seasonal dinner featuring seasonal ingredients throughout, giving you the feel of the refreshing and beautiful summer of Karuizawa.

Prime Shinshu is a dinner course that adds the colors of the four seasons to your stay in Karuizawa, surrounded by the clear air. All of our menus incorporate ingredients from Shinshu, and each dish that brings out the charm of the ingredients has been well-received as a special dinner that can only be enjoyed at our hotel. This summer, our chef has carefully arranged the Shinshu ingredients that color Karuizawa’s summer, and we will be presenting a total of 7 dishes that offer an exquisite balance of Japanese and Western cuisine.
The amuse dish is a Western style version of Shinshu soba. Enjoy this refreshing soba soup with Amela tomatoes grown in Nagano Prefecture and consommé. The appetizer was created with the image of a summer vegetable garden, and the combination of candied sweetfish from Nagano Prefecture and Chinese snow trout gives it a new flavor. Enjoy the exquisite balance of Japanese and Western. The cold soup is made with plenty of Kawanakajima peaches and is accented with black pepper. For the fish dish, grilled lobster and Shinshu salmon were served with a charred butter sauce with capers. You can enjoy the refreshing summer scent by shaving the lemon in front of the customer. For meat dishes, you can enjoy two delicious flavors in one dish: Shinshu premium beef sandwiched with green chili peppers, cutlets packed with flavor, and grilled fillet.
