A farmer in Osakikamijima, Hiroshima who is changing the future of Japan with oysters

Hiroshima boasts the largest production of oysters in Japan. Takashi Suzuki of Farm Suzuki is the only person in Japan who farms oysters using a unique method.
On Osakikamijima, which can only be accessed by ferry, Mr. Suzuki chose a pond instead of the sea that surrounds the island to farm oysters. The land of this pond, which was once a salt pan, has been cultivated to draw in clear groundwater and seawater from the ocean floor, creating an environment that can maximize the production of highly nutritious phytoplankton that feeds the oysters.

Furthermore, Mr. Suzuki is also particular about the cutting-edge aquaculture machine he introduced in October last year. The many baskets floating on the water are connected to an air compressor, allowing them to float on the surface of the water or sink. The machine, purchased from a French company, produces firm oysters by artificially creating dozens of low and high tides, which occur only once a day in the natural sea. In addition, by growing at several times the normal speed, it is now possible to produce three times a year.
